Title: Cooking: “Artisan Pasta”

Description:  Students in the three hour Artisan Pasta class will master old world pasta-making techniques. We will start by making two classic pasta doughs—semolina and egg. While the dough rests, we will be making a traditional ragu that will continue to simmer throughout the class. While the ragu simmers, students will learn various traditional hand shaping techniques using heirloom wooden tools. These techniques will be comprehensive of all types of pasta making for broad application. While shaping, we will discuss the regional history of the types and shapes of pasta, wine and cheese pairings, and how to source the highest quality, authentic ingredients. At the conclusion of the class, students will take home two batches of fresh pasta and approximately two quarts of hearty ragu for topping. Please note: This class will have unavoidable exposure to wheat and egg allergens. Students may wish to bring an apron to wear.

Instructor: Lindsey Boothe is a lifelong resident of Appalachia and has been a traditional spoon carver for most of her adult life. “I have a deep passion for my Appalachian heritage and for the people here. A lot of that has to do with the strong communities you’ll find throughout the region. I am working to bring those back.” In addition to  spoon carving, Lindsey loves to prepare traditional Appalachian foods for her family and friends. After leaving her home state of West Virginia and moving to Madison in 2020, she has become involved in several community initiatives involving traditional crafting and cooking. You can almost always find Lindsey working in her wood shop, enjoying time with her young family, or creating something delicious in her kitchen.

 Supplies and Attire: All materials and supplies will be provided. You may also want to bring an apron.

Important Information: Registering for a workshop indicates that the student is 19 years of age or older and understands that photographs/video may be taken during the event and their image may be used on Burritt on the Mountain’s website and social media outlets or other promotional materials. Registration also indicates that the student releases Burritt on the Mountain and the City of Huntsville, all their directors, employees, volunteers, and any persons associated with Burritt on the Mountain, from any liability for any bodily injury and/or property damage suffered by the attendee as a result of actives during the educational program.

Cancelation Policy:  Our workshops take a great deal of advance planning and purchasing of supplies. 25% of all ticket purchases are a non-refundable deposit. Students that cancel 30 days or more prior to the date of the class will be eligible for a refund, minus the non-refundable deposit. If a cancellation is requested 14 to 29 days from a class date, a refund of half the total price can be issued. No refunds will be issued less than 14 days from the start date of a class.*  To be fair and consistent, there can be no exceptions to this policy, regardless for the reason a cancelation is requested.

*We require a minimum number of students to hold a class. If this minimum is not met, the class may be canceled or rescheduled. In this case, a full refund will be offered.
