Title: Cooking: “Summer Sourdough”
Description: Students in the Summer Sourdough class will learn traditional sourdough baking techniques. We will be covering the bread making process from start to finish including making and feeding your sourdough starter, properly proofing and kneading dough, various loaf shaping techniques, and baking. These techniques will be comprehensive of all types of bread making for broad application. Throughout the class we will sample a variety of sourdough breads. Students will take home an heirloom sourdough starter, a dough proofing bucket with bread dough for future baking, and risen loaves for baking at home. Please note: This class will have unavoidable exposure to wheat and corn allergens. Please bring a digital kitchen scale if you have one.
Instructor: Lindsey Boothe is a lifelong resident of Appalachia and has been a traditional spoon carver for most of her adult life. “I have a deep passion for my Appalachian heritage and for the people here. A lot of that has to do with the strong communities you’ll find throughout the region. I am working to bring those back.” In addition to spoon carving, Lindsey loves to prepare traditional Appalachian foods for her family and friends. After leaving her home state of West Virginia and moving to Madison in 2020, she has become involved in several community initiatives involving traditional crafting and cooking. You can almost always find Lindsey working in her wood shop, enjoying time with her young family, or creating something delicious in her kitchen.
